BOTOK AMPELA HATI AYAM

BOTOK AMPELA HATI AYAM


Bahan-bahan/bumbu-bumbu :
    5 pasang hati ampela ayam, direbus, dipotong-potong
    150 gram kelapa parut kasar
    1 sendok makan petai cina
    10 buah cabai rawit merah utuh
    5 tangkai kemangi, dipetiki
    2 siung bawang putih, diiris tipis
    3 butir bawang merah, diiris tipis
    1 batang serai, dimemarkan, dipotong-potong
    3 buah belimbing sayur, dipotong-potong
    1 batang daun bawang, dipotong-potong
    1 1/4 sendok teh garam
    3/4 sendok teh gula pasir
    2 sendok makan minyak untuk menumis
    Daun pisang untuk memmbungkus
    Bumbu halus:
    2 siung bawang putih
    4 butir bawang merah
    1 cm kunyit, dibakar
    4 buah cabai merah keriting
    2 butir kemiri, disangrai
    1 cm kencur

Cara Pengolahan :
1. Panaskan minyak. Tumis bumbu halus sampai harum. Angkat.
2. Aduk hati ampela, kelapa parut, petai cina, cabai rawit, kemangi sampai rata. Masukkan bawang putih, bawang merah, dan serai. Aduk rata. Tambahkan belimbing sayur, daun bawang, garam, dan gula pasir. Aduk rata.
3. Ambil daun pisang. Sendokkan campuran hati ampela. Bungkus tum. Semat dengan lidi.
4. Kukus 30 menit di atas api sedang sampai matang.
