Es Palubutung

Es Palubutung (Sulawesi Selatan)

 

Bahan :
10 bh pisang raja, kukus, kupas
500 ml santan kental
250 gr tepung terigu
15 helai daun pandan, ambil airnya
10 lbr daun suji, ambil airnya
1/2 sdt air kapur sirih
1 sdt garam
20 gr gula pasir
2 sdm mentega tawar
Daun pisang untuk membungkus
Lidi untuk menyemat

Saus Santan :
600 ml santan kental
1/4 sdt vanili
1/2 sdt garam
4 sdm tepung beras larutkan
8 sdm air

Pelengkap :

Sirup merah
Es batu, kepruk

Cara Membuat :

1.Adonan palubutung : aduk, santan kental, air pandan, air suji, air kapur sirih, garam dan gula pasir. Lalu tuang ke dalam tepung terigu sedikit demi sedikit, aduk rata, masak, tambahkan mentega tawar, aduk hingga kalis dan dapat dibentuk. Ambil 1 lembar daun pisang, oles minyak, beri 3 sdm adonan, pipihkan, taruh pisang di atasnya, tutup dengan adonan, ratakan, gulung daun pisang sambil dipadatkan, semat ujungnya dengan lidi.
2. Panaskan dandang, ukus adonan pisang hingga matang, angkat, potong-potong.
3. Saus santan : rebus santan kental, vanili dan garam masak hingga mendidih, masukkan larutan tepung beras, aduk rata, masak hingga mengental, angkat.
4. Penyajian : susun potongan adonan palubutung, es batu siram saus santan dan sirup merah. Sajikan.
